In conjunction with our Nutrition Workshop Series, we are going to start offering weekly Recipes of the Week! This weeks contribution comes from one of our fitness members, Sara M.
Chocolate Coconut Energy Bites:
- 1/2 Cup Walnuts
- 1/2 Cup Cashews
- 1/3 Cup Cashew Butter (or another nut butter of your choice)
- 1/2 Cup Coconut Flakes
- 2 Tbs Cacao Powder
- 2 Tbs Cacao Nibs
- 1 Tbs Maple Syrup
- 1 Tsp Vanilla
- 1 Tsp Cinnamon
- 2 Tsp of Coconut Sugar (in it’s own bowl)
Add walnuts, cashews, coconut flakes into a food processes. Pulse until mixture is fine and continue to add other ingredients until a doughy texture is formed. Note: add water if the mixutre is too dry and needs to become more viscous. Scoop out in portions of 1 tablespoon and roll in your hands until they form a ball. Lastly, roll your ball in the coconut sugar bowl to give it a nice light layer. Store in the refrigerator and enjoy!
